BEEF….

As specialist suppliers to the catering industry for over 30 years, we recognise the need to supply a bespoke service to our clients, to meet their own individual requirements. We are always looking to improve this service and we are proud to introduce you to our new premium beef and lamb brand – Southern Gold. 

Livestock for our Southern Gold range is only sourced from assured farms that operate to the highest standards of animal welfare and husbandry and is selected in accordance with specific carcase weights and fat conformation levels. 

Processed through our own assured nominated and fully audited suppliers ensures the products are delivered to our state of the art approved cutting plant in the best possible condition. 

Southern Gold beef is a top quality beef brand which is extra matured to ensure the meat will be both flavoursome and succulent. 

CMB Foods have developed this brand with the help of local farmers and abattoirs, with all parties using best industry practices ensuring that the integrity of the brand is protected at each stage of the process. 

Animals processed for Southern Gold beef conform to the following criteria; 

Specification –

Maximum age 30 months. Born, reared and finished in the South of England.

Heifer (not having been used for breeding or in calf) and Steers. Bulls are not used.

Only beef produced, transported and slaughtered through an EBLEX* approved supply chain will be eligible.

All animals to be transported straight from farm to slaughter via the most direct route, to reduce stress and food miles.

Classification –

Carcass weight 260kg – 300kg

Fat Level 3 to 4L

Maturation –

Minimum of 14 days to consumption. Products are dry aged and overseen by our Factory Manager to ensure the best flavour and quality is reached. 


LAMB….

We are proud to support local lamb farmers and Southern Gold lamb is the very best of locally farmed produce.

Southern Gold lamb is processed in quality assured, independently inspected, local abattoirs and finished to the highest standards. It is then chilled and matured in our Higher Level EFSIS audited special chilling rooms which enhances both flavour and eating quality. 

Animals processed for Southern Gold lamb conform to the following criteria:

Specification –

Lambs must be born, reared and finished in the South of England. Females must have no permanent incisors, must not have been used for breeding or be pregnant at the time of slaughter.

Castrated and entire males must have no permanent incisors. Only lamb produced, transported and slaughtered through and EBLEX* approved supply chain will be eligible.

All animals to be transported straight from farm to slaughter via the most direct route, to reduce stress and food miles.

Carcass weight 15-22kg

Fat Level 3 to 4L
